Everything you’ve ever wanted to know about best-practice olive oil processing … and much, much more. That’s the program for the AOA’s annual Olive Oil Processing Workshop, being held this year in South Australia’s Riverland region.

Presented by renowned international olive oil consultant and EVOO judge Pablo Canamasas, the comprehensive two-day course covers every aspect of producing high quality olive oil, from grove management for optimal fruit quality to best-practice processing and storage. You’ll also learn about olive oil chemistry, and both the practical and technical aspects of oil extraction, with plenty of opportunities for questions along the way.

Award-winning processing in action

This year’s 2026 Processing Workshop is being held at the Mypolonga, South Australia production mill of award-winning producer Rio Vista Olives. The OMT equipment which will be used for the demonstrations has seen Rio Vista take Best of Show trophies at the Australian International Olive Awards for three of the last five years, so it’s an outstanding chance to see quality processing in action.
