The correct way to taste olive oil is not very polite, Peter O’Clery says. Standing in his olive grove, the Hall farmer demonstrates by taking a little oil in his mouth then noisily slurping it back on to his palate. Apprentice chefs are warming their own cups of olive oil in their hands, ready to taste. They’re part of the new Forchefs training program for apprentices, which takes a paddock-to-plate approach, and their session on how to taste olive oil is preparing them to be associate judges in the Canberra olive oil show.
