What to do with … leftover bread

Often when buying a good loaf of bread – particularly for a recipe – there will be plenty left over and it can go to waste. Perhaps the most obvious choice is to use it for toast, but there are other good options (including): • grill bread for crostini or bruschetta. Rub it liberally with garlic and olive oil then add your favourite toppings; • toss chunks of bread in olive oil, sprinkle with salt and pepper then toast in the oven until golden. Toss with bitter greens dressed with a piquant dressing and add a few anchovies for a quick winter salad.
