Turning canola into a niche gourmet oil

North West Tasmanian farmers are preparing to challenge olive oil in the premium end of the oil market. The Nichols family at Redbank farm at Sisters Creek are in the throes of pressing oil from their second crop of canola. But unlike the bulk commodity canola, this is cold pressed oil and, according to Caroline Nichols, has qualities that can rival the top end olive oils.
